One Pot Taco Rice

A quick and delicious one pot meal that brings all the flavors of tacos into a rice dish.

Ingredients

  • 1 cup rice
  • 1 pound ground beef
  • 1 cup taco sauce
  • 1 cup black beans, drained
  • 1 cup corn, canned or frozen
  • 2 cups broth
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 onion, diced
  • 1 bell pepper, diced

Instructions

  1. In a large pot, brown the ground beef over medium heat.
  2. Add the onion and bell pepper, cooking until softened.
  3. Stir in the spices, then add the rice, broth, taco sauce, black beans, and corn.
  4. Bring to a boil, then reduce heat, cover, and simmer until the rice is cooked.
  5. Serve warm, garnished with your favorite toppings.

Notes

  • For extra flavor, add shredded cheese on top before serving.
