  • 1 cup granulated sugar
  • ½ cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 2 large eggs
  • ½ cup buttermilk
  • ½ cup brewed coffee
  • ¼ cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 teaspoon peppermint extract
  • 1 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake tin with paper liners.
  2. In a mixing bowl, combine flour, sugar, cocoa, baking powder, baking soda, and salt.
  3. Add eggs, buttermilk, coffee, oil, vanilla, and peppermint extracts to the dry ingredients and mix until smooth.
  4. Fold in the chocolate chips.
  5. Fill each cupcake liner about 2/3 full with batter.
  6. Bake for 18-20 minutes or until a toothpick comes out clean.
  7. Let cool before frosting.
