  • 2 cups cooked rice
  • 1 pound boneless chicken breasts
  • 1 cup pineapple chunks
  • 1 tablespoon soy sauce
  • 2 tablespoons olive oil
  • 1 teaspoon ginger, grated
  • 1 clove garlic, minced
  • 1/2 cup green onions, chopped
  • Salt to taste
  • Black pepper to taste

Instructions

  1. In a large skillet, heat olive oil over medium heat.
  2. Add minced garlic and grated ginger to the skillet and sauté for about 1 minute.
  3. Cut the chicken into bite-sized pieces and add to the skillet. Cook until browned and cooked through.
  4. Stir in the pineapple chunks, soy sauce, salt, and pepper. Cook for another 5 minutes.
  5. In a separate pot, heat the cooked rice.
  6. Serve the chicken mixture over the bed of rice and top with chopped green onions.
