Pioneer Woman Crockpot Cheeseburger Soup Recipe

A hearty and delicious crockpot recipe featuring turkey bacon for a healthier twist on classic cheeseburger soup.

  • 1 pound ground turkey
  • 4 slices turkey bacon
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 3 medium potatoes, diced
  • 2 cups frozen mixed vegetables
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 1 cup milk or cream

Instructions

  1. In a skillet, cook the turkey bacon until crispy, then set aside.
  2. In the same skillet, cook the ground turkey until browned.
  3. Transfer the turkey to a crockpot and add in the onion, garlic, chicken broth, potatoes, mixed vegetables, Worcestershire sauce, salt, and pepper.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  5. In the last 30 minutes of cooking, stir in the milk and cheese until melted.
  6. Garnish with crumbled turkey bacon before serving.

Notes

  • This soup can be made ahead of time and tastes even better the next day.
  • Feel free to customize the vegetables based on your preference.
