Potato and Leek Soup

A delicious blend of potatoes and leeks made creamy with the addition of turkey bacon.

Ingredients

  • 4 cups potatoes, peeled and diced
  • 2 cups leeks, cleaned and sliced
  • 1 cup turkey bacon, chopped
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh chives, chopped

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add turkey bacon and cook until crispy.
  3. Add leeks and cook until softened.
  4. Add potatoes and chicken broth, bring to a boil.
  5. Reduce heat and simmer until potatoes are tender.
  6. Stir in heavy cream, salt, and pepper.
  7. Blend until smooth, garnish with chives, and serve warm.

Notes

  • For extra flavor, add garlic when cooking leeks.
  • Feel free to substitute regular bacon for turkey bacon if preferred.
