Potato Leek Soup

A warm and comforting potato leek soup made creamy with the addition of turkey bacon.

Ingredients

  • 4 large potatoes, peeled and diced
  • 3 leeks, cleaned and sliced
  • 4 slices turkey bacon, chopped
  • 1 onion, chopped
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 2 tablespoons butter
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crisp. Remove and set aside.
  2. Add butter to the pot, followed by onions and leeks. Sauté until softened.
  3. Add diced potatoes and broth. Bring to a boil, then reduce heat and simmer until potatoes are tender.
  4. Blend the soup until smooth, then stir in the heavy cream and season with salt and pepper.
  5. Serve warm, topped with the crispy turkey bacon.

Notes

  • For a lighter version, substitute cream with milk.
  • Add herbs like thyme for extra flavor.
