Ingredients

  • 1 medium butternut squash
  • 4 slices turkey bacon
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 2 garlic cloves, minced
  • 4 cups vegetable or chicken broth
  • 2 teaspoons ground cumin
  • Salt and pepper to taste
  • 1 cup heavy cream or coconut milk

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the butternut squash in half, scoop out the seeds, and drizzle with olive oil. Season with salt and pepper.
  3. Place the squash cut-side down on a baking sheet and roast for about 45 minutes, or until tender.
  4. In a large pot, cook the turkey bacon until crispy. Remove and chop into pieces.
  5. In the same pot, add the onion and garlic, sautéing until onions are translucent.
  6. Once the squash is roasted, scoop out the flesh and add it to the pot. Stir in the broth and cumin.
  7. Bring to a boil, then reduce heat and simmer for 20 minutes.
  8. Use an immersion blender to puree the soup until smooth.
  9. Stir in the chopped turkey bacon and cream. Adjust seasoning if needed.
  10. Serve hot and enjoy!

Notes

  • For an extra kick, add a pinch of cayenne pepper.
  • This soup can be made ahead of time and reheats well.
