  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg

  • 1 cup sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 can (15 oz) pumpkin puree
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  2. In a bowl, mix flour, baking soda, baking powder, cinnamon, nutmeg, and salt together.
  3. In a separate bowl, cream together the sugar and butter until smooth. Beat in the eggs one at a time, then stir in the pumpkin and vanilla.
  4. Gradually mix the dry ingredients into the pumpkin mixture.
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. Bake in preheated oven for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
