Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together the flour, baking powder, baking soda, cinnamon, salt, and nutmeg.
  3. In another bowl, combine the pumpkin puree, sugar, brown sugar, oil, eggs, and vanilla extract until well blended.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  5. Fill each muffin cup about 2/3 full with the batter.
  6. Bake for 18-20 minutes or until a toothpick comes out clean.
  7. Let cool for a few minutes before transferring to a wire rack.
