  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ cup granulated sugar
  • ½ cup light brown sugar
  • 1 cup canned pumpkin puree
  • 2 eggs
  • ½ cup vegetable oil
  • 1 teaspoon vanilla extract
  • ½ cup chopped walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In another bowl, combine the sugars, pumpkin puree, eggs, oil, and vanilla extract.
  4. Mix the wet ingredients into the dry ingredients until just combined. Fold in the walnuts if using.
  5. Divide the batter evenly among the muffin cups.
  6. Bake for 20-25 minutes or until a toothpick comes out clean.
  7. Allow to cool slightly before transferring to a wire rack.

Notes

  • For extra flavor, add chocolate chips to the batter.
  • These muffins freeze well; just thaw before serving.
