Red Curry Chicken Soup

  • 1 tablespoon coconut oil
  • 1 pound chicken breast, diced
  • 2 cups chicken broth
  • 1 can coconut milk
  • 2 tablespoons red curry paste
  • 1 cup bell peppers, sliced
  • 1 cup carrots, sliced
  • 2 cups spinach
  • 1 tablespoon lime juice
  • salt to taste

Instructions

  1. Heat the coconut oil in a large pot over medium heat.
  2. Add the diced chicken and cook until no longer pink.
  3. Stir in the red curry paste and cook for 1 minute.
  4. Add chicken broth and coconut milk, and bring to a simmer.
  5. Mix in bell peppers and carrots, cooking until tender.
  6. Stir in spinach and lime juice, cooking for an additional 2 minutes.
  7. Season with salt to taste and serve hot.
