Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a large bowl, combine the flour, sugar, baking soda, salt, and cocoa powder.
  3. In another bowl, mix the oil, buttermilk, eggs, food coloring, vanilla, and vinegar.
  4. Gradually add the wet ingredients to the dry ingredients and mix until just combined.
  5. Divide the batter between the prepared pans and bake for 25-30 minutes.
  6. Let the cakes cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
  7. For the frosting, beat the mascarpone cheese, heavy cream, powdered sugar, and vanilla until soft peaks form.
  8. Once the cakes are cooled, layer and frost them with the mascarpone whipped cream frosting.
