  • 1 pound Italian sausage, casings removed
  • 2 cups diced zucchini
  • 1 can (14.5 ounces) diced tomatoes, with juices
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Cook rigatoni pasta according to package instructions; drain.
  2. In a large skillet, cook sausage over medium heat until browned. Add garlic and zucchini; cook until tender.
  3. Stir in tomatoes, oregano, salt, and pepper; cook for 5 minutes.
