Roasted Butternut Squash and Apple Bruschetta

  • 1 medium butternut squash
  • 2 apples
  • 1 baguette
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon cinnamon
  • 1 tablespoon balsamic vinegar
  • 1/4 cup crumbled goat cheese
  • 1/4 cup chopped fresh parsley

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel and cube the butternut squash.
  3. Core and chop the apples.
  4. Toss the squash and apples in olive oil, salt, pepper, and cinnamon.
  5. Spread them out on a baking sheet and roast for 25-30 minutes.
  6. Meanwhile, slice the baguette and toast until golden brown.
  7. Once the squash and apples are done, remove from the oven and drizzle with balsamic vinegar.
  8. Top each toasted baguette slice with the roasted mixture, goat cheese, and parsley.
