  • 2 cloves garlic, minced
  • 4 cups vegetable broth

  • pepper to taste
  • 1/2 cup coconut milk

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the butternut squash in half and remove the seeds. Roast it on a baking sheet for about 25-30 minutes or until tender.
