  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1 medium onion, diced
  • 2 tablespoons olive oil
  • 1 teaspoon thyme
  • 1 cup grated parmesan cheese
  • Salt to taste
  • Black pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add diced onion and sauté until translucent.
  2. Add roasted garlic and thyme, cooking for another minute.
  3. Pour in the vegetable broth and bring to a boil.
  4. Reduce heat and simmer for 15 minutes.
  5. Blend the soup until smooth, then stir in heavy cream and half of the parmesan cheese.
  6. Season with salt and black pepper to taste.
  7. Serve hot, garnished with remaining parmesan cheese.
