Roasted Tomato Basil Soup

Ingredients

  • 2 pounds ripe tomatoes
  • 1 large onion
  • 4 cloves garlic
  • 1 tablespoon olive oil
  • 2 cups vegetable broth
  • 1 teaspoon sugar
  • 1 cup fresh basil leaves
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Slice the tomatoes in half and place them on a baking sheet.
  3. Chop the onion and garlic, and add them to the baking sheet.
  4. Drizzle with olive oil, sprinkle with salt and pepper, and toss to coat.
  5. Roast in the oven for about 30 minutes until everything is caramelized.
  6. Transfer the roasted vegetables to a pot, add vegetable broth and sugar, and bring to a simmer.
  7. Stir in the fresh basil, then blend the soup until smooth.
  8. Adjust seasoning, then serve hot.
