Sausage and Potato Meal Prep Breakfast Bowls

Ingredients

  • 4 medium potatoes
  • 1 pound sausage
  • 1 cup bell peppers, diced
  • 1 cup onions, diced
  • 4 large eggs
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Dice the potatoes and toss with olive oil, salt, and pepper.
  3. Spread potatoes on a baking sheet and bake for 25 minutes.
  4. In a skillet, cook the sausage until browned. Add bell peppers and onions, cooking until soft.
  5. In a separate pan, scramble the eggs and set aside.
  6. Once potatoes are done, combine with the sausage mixture.
  7. Portion into bowls and top with scrambled eggs.
