- 4 large baking potatoes
- 1 pound ground beef
- 1 cup frozen peas and carrots
- 1 cup beef broth
- 2 tablespoons tomato paste
- 1 teaspoon Worcestershire sauce
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cups mashed potatoes (for topping)
- 1 cup shredded cheddar cheese
- Preheat your oven to 400°F (200°C).
- Scrub the baking potatoes and pierce them with a fork. Bake for about 45-60 minutes until tender.
- In a skillet, cook the ground beef over medium heat until browned. Drain excess fat.
- Add the peas and carrots, beef broth, tomato paste, Worcestershire sauce, garlic powder, onion powder, salt, and pepper. Simmer for about 10 minutes.
- Once the potatoes are baked, carefully slice them open and fluff the insides.
- Spoon the beef mixture into the potatoes, then top with mashed potatoes and sprinkle with cheddar cheese.
- Return to the oven and bake for an additional 15 minutes until the cheese is bubbly.
