Shepherd’s Pie Baked Potatoe

  • 4 large baking potatoes
  • 1 pound ground beef
  • 1 cup frozen peas and carrots
  • 1 cup beef broth
  • 2 tablespoons tomato paste
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups mashed potatoes (for topping)
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Scrub the baking potatoes and pierce them with a fork. Bake for about 45-60 minutes until tender.
  3. In a skillet, cook the ground beef over medium heat until browned. Drain excess fat.
  4. Add the peas and carrots, beef broth, tomato paste, Worcestershire sauce, garlic powder, onion powder, salt, and pepper. Simmer for about 10 minutes.
  5. Once the potatoes are baked, carefully slice them open and fluff the insides.
  6. Spoon the beef mixture into the potatoes, then top with mashed potatoes and sprinkle with cheddar cheese.
  7. Return to the oven and bake for an additional 15 minutes until the cheese is bubbly.
