4 cups chicken broth
1 pound ground turkey
1 cup diced turkey bacon
1 cup chopped onions
2 cups diced potatoes
2 cups mixed vegetables (peas, carrots, corn)
2 tablespoons tomato paste
2 cloves garlic, minced
1 teaspoon dried thyme
1 teaspoon salt
1/2 teaspoon pepper
Instructions
In a large pot, cook the turkey bacon over medium heat until crisp. Remove and drain on paper towels.
In the same pot, add the ground turkey and cook until browned.
Add the onions and garlic, sauté until translucent.
Stir in the diced potatoes, mixed vegetables, chicken broth, tomato paste, thyme, salt, and pepper.
Bring to a boil, then reduce heat and simmer until the potatoes are tender.
Serve hot, topped with crispy turkey bacon.
Notes
This soup can be made ahead and stored in the fridge for easy reheating.
Feel free to use leftover chicken or beef instead of ground turkey.
