- 2 pounds beef chuck, cut into 1-inch pieces
- 4 slices bacon, chopped
- 2 cups red wine
- 2 cups beef broth
- 4 carrots, sliced
- 1 onion, diced
- 3 cloves garlic, minced
- 1 tablespoon tomato paste
- 1 teaspoon dried thyme
- 1 bay leaf
- 2 tablespoons flour
- Salt to taste
- Pepper to taste
- 2 cups mushrooms, quartered
- In a skillet, cook bacon until crisp. Remove and set aside.
- In the same skillet, sear the beef until browned on all sides.
- Add beef to the slow cooker along with bacon, wine, beef broth, carrots, onion, garlic, tomato paste, thyme, bay leaf, and flour.
- Stir to combine and season with salt and pepper.
- Cover and cook on low for 8 hours or high for 4 hours.
- Add mushrooms in the last hour of cooking.
- Remove bay leaf before serving.
