Slow Cooker Beef Bourguignon

  • 2 pounds beef chuck, cut into 1-inch pieces
  • 4 slices bacon, chopped
  • 2 cups red wine
  • 2 cups beef broth
  • 4 carrots, sliced
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon tomato paste
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 2 tablespoons flour
  • Salt to taste
  • Pepper to taste
  • 2 cups mushrooms, quartered

Instructions

  1. In a skillet, cook bacon until crisp. Remove and set aside.
  2. In the same skillet, sear the beef until browned on all sides.
  3. Add beef to the slow cooker along with bacon, wine, beef broth, carrots, onion, garlic, tomato paste, thyme, bay leaf, and flour.
  4. Stir to combine and season with salt and pepper.
  5. Cover and cook on low for 8 hours or high for 4 hours.
  6. Add mushrooms in the last hour of cooking.
  7. Remove bay leaf before serving.

Notes

  • Serve with crusty bread for dipping.
  • This dish can be made a day in advance for better flavor.
