Slow Cooker Beef Bourguignon

  • 2 pounds beef chuck, cut into 1-inch cubes
  • 4 slices bacon, diced
  • 2 cups carrots, sliced
  • 1 cup onions, diced
  • 2 cups mushrooms, sliced
  • 3 cloves garlic, minced
  • 2 cups red wine
  • 2 cups beef broth
  • 1 tablespoon tomato paste
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons fresh thyme
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. In a skillet, cook the diced bacon until crispy. Remove and set aside.
  2. In the same skillet, brown the beef cubes on all sides.
  3. Add the beef to the slow cooker along with the bacon, carrots, onions, mushrooms, and garlic.
  4. Pour in the red wine and beef broth, then stir in the tomato paste, Worcestershire sauce, thyme, and bay leaves.
  5. Season with salt and pepper to taste.
  6. Cover and cook on low for 7-8 hours, or until the beef is tender.
  7. Remove bay leaves before serving.

Notes

  • This dish can be served over mashed potatoes or with crusty bread.
  • For added flavor, let the stew sit overnight in the refrigerator and reheat before serving.
