- 2 pounds beef chuck, cut into 1-inch cubes
- 4 slices bacon, diced
- 2 cups carrots, sliced
- 1 cup onions, diced
- 2 cups mushrooms, sliced
- 3 cloves garlic, minced
- 2 cups red wine
- 2 cups beef broth
- 1 tablespoon tomato paste
- 1 tablespoon Worcestershire sauce
- 2 teaspoons fresh thyme
- 2 bay leaves
- Salt and pepper to taste
- In a skillet, cook the diced bacon until crispy. Remove and set aside.
- In the same skillet, brown the beef cubes on all sides.
- Add the beef to the slow cooker along with the bacon, carrots, onions, mushrooms, and garlic.
- Pour in the red wine and beef broth, then stir in the tomato paste, Worcestershire sauce, thyme, and bay leaves.
- Season with salt and pepper to taste.
- Cover and cook on low for 7-8 hours, or until the beef is tender.
- Remove bay leaves before serving.

- This dish can be served over mashed potatoes or with crusty bread.
- For added flavor, let the stew sit overnight in the refrigerator and reheat before serving.
