Slow Cooker Chicken Burrito Bowl

A delightful and easy slow cooker chicken burrito bowl perfect for family meals.

Ingredients

  • 2 pounds boneless, skinless chicken breasts
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 can (10 ounces) diced tomatoes with green chilies
  • 1 tablespoon taco seasoning
  • 1 cup salsa
  • 2 cups cooked rice
  • 1 cup shredded cheese
  • 1 avocado, diced
  • 1/4 cup cilantro, chopped

Instructions

  1. Place chicken breasts at the bottom of the slow cooker.
  2. Add black beans, corn, diced tomatoes, taco seasoning, and salsa on top of the chicken.
  3. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  4. Once cooked, shred the chicken with two forks and mix it with other ingredients in the cooker.
  5. Serve over cooked rice and top with cheese, avocado, and cilantro.
