  • 2 pounds boneless chicken thighs
  • 1 cup diced onions
  • 4 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 tablespoons garam masala
  • 1 teaspoon turmeric
  • 1 teaspoon cumin
  • 1 can (14 oz) crushed tomatoes
  • 1 cup coconut milk
  • 1/4 cup butter
  • salt to taste
  • 1/4 cup fresh cilantro, for garnish

Instructions

  1. Place the chicken thighs in the slow cooker.
  2. Add the diced onions, garlic, ginger, garam masala, turmeric, and cumin.
  3. Pour in the crushed tomatoes and coconut milk, then add the butter.
  4. Stir everything together until well combined.
  5. Cover and cook on low for 6-8 hours or high for 4-5 hours.
  6. Once cooked, shred the chicken with two forks and stir back into the sauce.
  7. Serve over rice and garnish with fresh cilantro.
