- 1 pound carrots
- 4 slices turkey bacon
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 tablespoon fresh parsley, chopped
- Preheat the oven to 425°F (220°C).
- Peel and trim the carrots, and place them on a baking sheet.
- Drizzle the carrots with olive oil, salt, pepper, and garlic powder.
- Roast the carrots for 25-30 minutes until tender.
- While the carrots are roasting, cook the turkey bacon in a skillet until crispy. Then chop it into pieces.
- After the carrots are done, remove them from the oven and smash each carrot with a fork.
- Sprinkle the chopped turkey bacon and parsley on top of the smashed carrots before serving.
Notes
- For extra flavor, add a sprinkle of Parmesan cheese on top before serving.
- You can substitute regular bacon if desired.
