Smashed Roasted Carrots

Discover a delicious twist to your regular roasted carrots by smashing them and adding turkey bacon for an extra layer of flavor!

Ingredients

  • 1 pound carrots
  • 4 slices turkey bacon
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Peel and trim the carrots, and place them on a baking sheet.
  3. Drizzle the carrots with olive oil, salt, pepper, and garlic powder.
  4. Roast the carrots for 25-30 minutes until tender.
  5. While the carrots are roasting, cook the turkey bacon in a skillet until crispy. Then chop it into pieces.
  6. After the carrots are done, remove them from the oven and smash each carrot with a fork.
  7. Sprinkle the chopped turkey bacon and parsley on top of the smashed carrots before serving.

Notes

  • For extra flavor, add a sprinkle of Parmesan cheese on top before serving.
  • You can substitute regular bacon if desired.
