Spicy Butternut Squash Sweet Potato Soup

  • 2 medium sweet potatoes
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper
  • 4 cups vegetable broth
  • 1 cup coconut milk
  • Salt to taste
  • Pepper to taste

Instructions

  1. Peel and cube the butternut squash and sweet potatoes.
  2. Heat olive oil in a large pot over medium heat. Add onions and garlic, cooking until softened.
  3. Stir in cumin, paprika, and cayenne pepper, cooking for an additional minute.
  4. Add cubed squash and sweet potatoes to the pot, then pour in vegetable broth.
  5. Bring to a boil, then reduce heat and simmer until vegetables are tender.
  6. Blend the soup until smooth, then stir in coconut milk.
  7. Season with salt and pepper to taste. Serve hot.

Notes
