Sweet Potato Taco Bowl

A delicious and easy-to-make Sweet Potato Taco Bowl featuring a twist of turkey bacon.

Ingredients

  • 2 medium sweet potatoes
  • 1 cup black beans
  • 1 cup corn
  • 1 avocado
  • 4 slices turkey bacon
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt to taste
  • Optional toppings (sour cream, cilantro, lime)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel and dice sweet potatoes into cubes, then toss with olive oil, chili powder, cumin, and salt.
  3. Spread on a baking sheet and roast for 20-25 minutes until tender.
  4. While sweet potatoes are roasting, cook the turkey bacon in a skillet until crispy, then chop.
  5. In a bowl, combine roasted sweet potatoes, black beans, corn, and chopped turkey bacon.
  6. Top with sliced avocado and any optional toppings you desire.

Notes

  • Adjust spices to your liking for more or less heat.
