1 cup uncooked rice
1 pound ground beef
4 slices turkey bacon
1 cup black beans
1 cup corn
1 bell pepper, diced
1 onion, chopped
2 cloves garlic, minced
1 teaspoon chili powder
1 teaspoon cumin
1 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup shredded cheese (optional)
1/4 cup fresh cilantro, chopped (for garnish)
Instructions
Cook the rice according to package instructions.
In a large skillet, cook the turkey bacon until crispy. Remove and set aside.
Add the ground beef to the skillet and cook until browned.
Add the onion, garlic, bell pepper, black beans, corn, chili powder, cumin, paprika, salt, and pepper to the skillet. Stir well and cook until the vegetables are tender.
Mix the cooked rice into the beef and vegetable mixture.
Serve the taco rice mixture in bowls, topped with crumbled turkey bacon and shredded cheese, if desired.
Garnish with fresh cilantro.
Notes
You can substitute ground turkey or chicken for the beef.
