  • 2 tablespoons red curry paste
  • 1 can coconut milk (13.5 oz)
  • 4 cups chicken broth
  • 1 tablespoon fish sauce
  • 1 tablespoon lime juice
  • 1 cup bell peppers, sliced
  • 1 cup carrots, sliced
  • 1 cup mushrooms, sliced
  • 1 cup spinach
  • 2 tablespoons cilantro, chopped

Instructions

  1. Heat the coconut oil in a large pot over medium heat.
  2. Add the diced chicken and sauté until browned.
  3. Stir in the onion, garlic, and ginger, cooking until softened.
  4. Mix in the red curry paste, cooking for another minute.
  5. Add the coconut milk and chicken broth, bringing to a simmer.
  6. Stir in the fish sauce, lime juice, bell peppers, carrots, and mushrooms.
  7. Simmer for about 15 minutes until vegetables are tender.
  8. Mix in the spinach and cook until wilted.
  9. Serve hot, garnished with cilantro.

Notes

  • For a vegetarian version, substitute chicken with tofu and use vegetable broth.
