Thai Chicken Curry Soup

A delicious and easy Thai chicken curry soup that brings the flavors of Thailand right to your kitchen.

  • 1 tablespoon vegetable oil
  • 1 pound chicken breast, diced
  • 1 can coconut milk
  • 2 cups chicken broth
  • 2 tablespoons red curry paste
  • 1 tablespoon fish sauce
  • 1 tablespoon brown sugar
  • 2 cups mixed vegetables (carrots, bell peppers, etc.)
  • 1 tablespoon lime juice
  • Fresh cilantro for garnish

Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the diced chicken and cook until browned.
  3. Stir in the red curry paste and cook for 1 minute.
  4. Add the coconut milk and chicken broth, then bring to a simmer.
  5. Stir in the fish sauce, brown sugar, and mixed vegetables.
  6. Cook for 10–15 minutes until vegetables are tender.
  7. Remove from heat and stir in lime juice.
  8. Serve hot, garnished with fresh cilantro.

Notes

  • Adjust the spiciness by adding more or less curry paste.
  • Serve with rice for a more filling meal.
