- 2 cups chicken broth
- 1 pound boneless chicken breasts
- 8 ounces rice noodles
- 1 cup mushrooms, sliced
- 1 cup bell pepper, sliced
- 3 green onions, chopped
- 1 tablespoon soy sauce
- 1 tablespoon lime juice
- 2 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1 tablespoon fresh cilantro, chopped
- In a large pot, bring chicken broth to a boil.
- Add the chicken breasts and cook until fully cooked, about 15 minutes.
- Remove chicken from pot, shred, and set aside.
- In the same pot, add the mushrooms, bell peppers, garlic, and ginger. Cook for 5 minutes.
- Add the rice noodles and cook according to package instructions.
- Return shredded chicken to pot, add soy sauce and lime juice, and stir well.
- Serve hot, garnished with green onions and cilantro.
