Thai Chicken Noodle Soup

Ingredients

  • 2 cups chicken broth
  • 1 pound boneless chicken breasts
  • 8 ounces rice noodles
  • 1 cup mushrooms, sliced
  • 1 cup bell pepper, sliced
  • 3 green onions, chopped
  • 1 tablespoon soy sauce
  • 1 tablespoon lime juice
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 tablespoon fresh cilantro, chopped

Instructions

  1. In a large pot, bring chicken broth to a boil.
  2. Add the chicken breasts and cook until fully cooked, about 15 minutes.
  3. Remove chicken from pot, shred, and set aside.
  4. In the same pot, add the mushrooms, bell peppers, garlic, and ginger. Cook for 5 minutes.
  5. Add the rice noodles and cook according to package instructions.
  6. Return shredded chicken to pot, add soy sauce and lime juice, and stir well.
  7. Serve hot, garnished with green onions and cilantro.

Notes

  • Adjust seasoning to taste.
  • For extra spice, add sliced chili peppers.
