Thai Fish Curry Recipe

  • 1 pound white fish fillets
  • 1 can (400ml) coconut milk
  • 2 tablespoons red curry paste
  • 1 tablespoon fish sauce
  • 1 tablespoon lime juice
  • 1 cup spinach
  • 1 red bell pepper, sliced
  • 2 cups jasmine rice
  • 2 cups water
  • 1 tablespoon vegetable oil

Instructions

  1. Heat the vegetable oil in a pan over medium heat.
  2. Add the red curry paste and stir for 1 minute until fragrant.
  3. Pour in the coconut milk and bring to a simmer.
  4. Add the fish sauce, lime juice, and sliced bell pepper.
  5. Gently place the fish fillets into the curry and cook for 10 minutes.
  6. In the meantime, rinse jasmine rice and cook it with water according to package instructions.
  7. Add spinach to the curry in the last 2 minutes of cooking.
  8. Serve the fish curry over the jasmine rice.

Notes

  • Adjust the level of spiciness by adding more or less curry paste.
  • Fresh herbs like cilantro can enhance the flavor.
