  • 1 cup strong brewed coffee
  • ½ cup mascarpone cheese
  • 2 eggs
  • ½ cup heavy cream
  • 2 tsp baking powder
  • 1 tsp vanilla extract
  • ¼ cup cocoa powder

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix together the flour, sugar, and baking powder.
  3. In another bowl, combine the eggs, brewed coffee, vanilla extract, and mascarpone cheese until smooth.
  4. Add the wet ingredients to the dry ingredients and mix until just combined.
  5. Pour the batter into a greased cake pan and bake for 25-30 minutes.
  6. Allow the cake to cool before frosting with whipped heavy cream and dusting with cocoa powder.
