Tuscan Chicken and Spaghetti Squash Recipe

Ingredients

  • 1 medium spaghetti squash
  • 4 boneless chicken breasts
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes
  • 1 cup cherry tomatoes, halved
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut the spaghetti squash in half lengthwise and scoop out the seeds.
  3. Drizzle with olive oil and season with salt and pepper.
  4. Place cut side down on a baking sheet and bake for 30-40 minutes.
  5. While the squash is baking, heat olive oil in a large skillet over medium heat.
  6. Add garlic and sauté for 1-2 minutes until fragrant.
  7. Add chicken breasts and season with basil, oregano, and red pepper flakes.
  8. Cook chicken for 6-7 minutes per side, or until fully cooked.
  9. Once the chicken is cooked, add cherry tomatoes and cook until they start to soften.
  10. Stir in heavy cream and Parmesan cheese, mixing until combined.
  11. Once the squash is done, scrape the strands with a fork and serve with the chicken and sauce on top.

Notes

  • Serve with a side salad for a complete meal.
  • Leftovers can be stored in an airtight container for up to three days.
