Twice Baked Loaded Breakfast Potatoes

A delicious breakfast option featuring twice baked potatoes loaded with turkey bacon and chicken ham.

  • 4 large russet potatoes
  • 4 slices turkey bacon
  • 1 cup cooked chicken ham, diced
  • 1 cup shredded cheese
  • 1/2 cup sour cream
  • 2 green onions, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash the potatoes and poke holes in them with a fork.
  3. Bake the potatoes for about 45 minutes or until tender.
  4. While the potatoes are baking, cook the turkey bacon until crispy, then chop it into small pieces.
  5. Once the potatoes are done, remove them from the oven and let them cool slightly.
  6. Cut the potatoes in half and scoop out some of the flesh, placing it in a mixing bowl.
  7. Add the chicken ham, cheese, sour cream, green onions, garlic powder, onion powder, salt, and pepper to the bowl, mixing well.
  8. Fill the potato skins with the mixture and top with extra cheese.
  9. Return the stuffed potatoes to the oven and bake for an additional 15 minutes.
  10. Serve warm and enjoy!

Notes

  • For a vegetarian option, you can omit the turkey bacon and chicken ham.
  • Try adding different toppings like jalapeños or avocados for a twist.
