  • 1 cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 4 large eggs
  • 1 cup buttermilk
  • ½ cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water

Instructions

  1. Preheat the oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a large bowl, mix the dry ingredients together: gluten-free flour, cocoa powder, granulated sugar, brown sugar, baking soda, and salt.
  3. In another bowl, whisk together the eggs, buttermilk, vegetable oil, and vanilla extract.
  4. Combine the wet ingredients with the dry ingredients and mix well.
  5. Slowly add the boiling water to the mixture and stir until well combined.
  6. Pour the batter evenly into the prepared cake pans.
  7. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the cakes to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.

Notes

  • For an extra indulgent touch, add a chocolate ganache frosting.
