- 1 ½ cups gluten-free all-purpose flour
- 1 cup unsweetened cocoa powder
- 1 cup granulated sugar
- 1 cup brown sugar
- 1 teaspoon baking soda
- ½ teaspoon salt
- 4 large eggs
- 1 cup buttermilk
- ½ cup vegetable oil
- 2 teaspoons vanilla extract
- 1 cup boiling water
- Preheat the oven to 350°F (175°C) and grease two 9-inch round cake pans.
- In a large bowl, mix the dry ingredients together: gluten-free flour, cocoa powder, granulated sugar, brown sugar, baking soda, and salt.
- In another bowl, whisk together the eggs, buttermilk, vegetable oil, and vanilla extract.
- Combine the wet ingredients with the dry ingredients and mix well.
- Slowly add the boiling water to the mixture and stir until well combined.
- Pour the batter evenly into the prepared cake pans.
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cakes to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
