- 4 large zucchini
- 1 cup vegan ricotta
- 1/2 cup marinara sauce
- 1/4 cup nutritional yeast
- 2 cloves garlic, minced
- 1 teaspoon dried basil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Preheat the oven to 375°F (190°C).
- Slice the zucchini lengthwise into thin strips.
- In a bowl, mix the vegan ricotta, nutritional yeast, garlic, basil, salt, and pepper.
- Spread a thin layer of marinara sauce on the bottom of a baking dish.
- Place a spoonful of the ricotta mixture on each zucchini strip and roll up.
- Arrange the rolls in the baking dish and top with remaining marinara sauce.
- Bake for 25 minutes until heated through.
