Vegan Zucchini Rollatini

A delicious vegan version of the traditional Italian dish, filled with flavorful ingredients!

  • 4 large zucchini
  • 1 cup vegan ricotta
  • 1/2 cup marinara sauce
  • 1/4 cup nutritional yeast
  • 2 cloves garlic, minced
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice the zucchini lengthwise into thin strips.
  3. In a bowl, mix the vegan ricotta, nutritional yeast, garlic, basil, salt, and pepper.
  4. Spread a thin layer of marinara sauce on the bottom of a baking dish.
  5. Place a spoonful of the ricotta mixture on each zucchini strip and roll up.
  6. Arrange the rolls in the baking dish and top with remaining marinara sauce.
  7. Bake for 25 minutes until heated through.

Notes

  • For added flavor, you can include fresh herbs.
  • Serve with a side salad for a complete meal.
