Vegetable Soup

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 3 garlic cloves, minced
  • 4 cups vegetable broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 bay leaf
  • 2 cups mixed vegetables (e.g. green beans, peas)
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the onions, carrots, and celery, and sauté until they are softened.
  3. Stir in the garlic, and cook for another minute.
  4. Add the vegetable broth, diced tomatoes, basil, oregano, and bay leaf to the pot.
  5. Bring the mixture to a boil, then reduce heat and simmer for 20 minutes.
  6. Stir in the mixed vegetables and cook for an additional 10 minutes.
  7. Season with salt and pepper to taste before serving.

Notes

  • For a heartier soup, add cooked beans or lentils.
  • Feel free to add any leftover vegetables you have on hand.
