Veggie Frittata with Bell Peppers, Onions, and Mushrooms

A delicious and nutritious Veggie Frittata packed with colorful bell peppers, onions, and mushrooms, perfect for any meal of the day.

Ingredients

  • 6 large eggs
  • 1 cup chopped bell peppers
  • 1 cup sliced onions
  • 1 cup sliced mushrooms
  • 1/2 cup shredded cheese
  • 2 tablespoons olive oil
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat the olive oil over medium heat.
  3. Add the onions, bell peppers, and mushrooms, and sauté until soft.
  4. In a bowl, whisk the eggs and season with salt and pepper.
  5. Pour the egg mixture over the sautéed vegetables in the skillet.
  6. Sprinkle the cheese on top and cook for a few minutes until the edges begin to set.
  7. Transfer the skillet to the oven and bake for 15-20 minutes until fully set.
  8. Remove from the oven and let it cool for a few minutes before slicing and serving.
