- 3 ripe bananas
- 1/3 cup melted coconut oil
- 1/2 cup brown sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1 1/2 cups whole wheat flour
- 1/2 cup chopped walnuts (optional)
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, mash the ripe bananas with a fork until smooth.
- Stir in the melted coconut oil, brown sugar, egg, and vanilla extract.
- Add in the baking soda, salt, and cinnamon. Mix well.
- Gradually add the whole wheat flour and stir until just combined.
- If using, fold in the chopped walnuts.
- Pour the batter into a greased loaf pan.
- Bake for 50-60 minutes or until a toothpick inserted comes out clean.
- Allow to cool before slicing and serving.
