  • 3 ripe bananas
  • 1/3 cup melted coconut oil
  • 1/2 cup brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 1/2 cups whole wheat flour
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, mash the ripe bananas with a fork until smooth.
  3. Stir in the melted coconut oil, brown sugar, egg, and vanilla extract.
  4. Add in the baking soda, salt, and cinnamon. Mix well.
  5. Gradually add the whole wheat flour and stir until just combined.
  6. If using, fold in the chopped walnuts.
  7. Pour the batter into a greased loaf pan.
  8. Bake for 50-60 minutes or until a toothpick inserted comes out clean.
  9. Allow to cool before slicing and serving.

Notes

  • This banana bread can be made in advance and stored in an airtight container.
  • You can also freeze slices for later use.
