  • 2 teaspoons vanilla extract
  • 1 tablespoon lemon zest
  • 1 1/2 cups fresh blueberries

Instructions

  1. Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, mix the buttermilk, melted butter, eggs, vanilla extract, and lemon zest until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Gently fold in the blueberries.
  5. Fill each muffin cup about 2/3 full with batter.
  6. For the streusel topping, mix equal parts flour and sugar with melted butter to create a crumbly mixture, then sprinkle on top of the muffins.
  7. Bake for 20-25 minutes or until a toothpick comes out clean.
  8. Allow to cool for a few minutes before removing from the tin.
