  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 3/4 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 16 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon lemon juice

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a large bowl, mix together grated carrots, flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, whisk together granulated sugar, brown sugar, oil, eggs, and vanilla extract.
  4. Combine the wet and dry ingredients until well mixed.
  5. Pour the batter into a greased springform pan.
  6. Bake in the preheated oven for 50-60 minutes or until a toothpick comes out clean.
  7. While the cake cools, prepare the cheesecake layer by whipping the cream cheese until smooth, then add powdered sugar and lemon juice.
  8. Spread the cheesecake mixture over the cooled carrot cake layer.
  9. Chill in the refrigerator for at least 4 hours before serving.

Notes

  • For added flavor, you can also include crushed pineapple or nuts in the batter.
