- 2 cups grated carrots
- 1 cup all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 3/4 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 cup vegetable oil
- 3 large eggs
- 1 teaspoon vanilla extract
- 16 ounces cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon lemon juice
- Preheat the oven to 325°F (160°C).
- In a large bowl, mix together grated carrots, flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
- In another bowl, whisk together granulated sugar, brown sugar, oil, eggs, and vanilla extract.
- Combine the wet and dry ingredients until well mixed.
- Pour the batter into a greased springform pan.
- Bake in the preheated oven for 50-60 minutes or until a toothpick comes out clean.
- While the cake cools, prepare the cheesecake layer by whipping the cream cheese until smooth, then add powdered sugar and lemon juice.
