  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon ground ginger
  • 1 tablespoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/4 cup molasses
  • 1 large egg
  • 1/4 cup coarse sugar for rolling

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together flour, baking soda, salt, ginger, cinnamon, and cloves.
  3. In another bowl, beat together butter, granulated sugar, and brown sugar until smooth.
  4. Add molasses and egg to the butter mixture and mix well.
  5. Gradually add the dry ingredients to the wet ingredients and mix until combined.
  6. Form dough into balls and roll them in coarse sugar.
  7. Place on a baking sheet lined with parchment paper, leaving space in between.
  8. Bake for 10-12 minutes until the edges are set but soft in the middle.
  9. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

  • For extra flavor, refrigerate the dough for 30 minutes before baking.
  • These cookies taste even better the next day!
