Creamy Cajun Shrimp Pasta

  • 8 ounces fettuccine pasta
  • 1 pound shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 2 tablespoons Cajun seasoning
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons chopped parsley
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Cook the fettuccine according to package directions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add chopped onion and garlic, sauté until softened.
  3. Add shrimp to the skillet and cook until they turn pink, about 3-4 minutes.
  4. Stir in the heavy cream and Cajun seasoning, bringing it to a simmer.
  5. Add the Parmesan cheese and stir until melted and the sauce has thickened.
  6. Add the cooked fettuccine to the skillet, tossing to coat.
  7. Season with salt and black pepper to taste, garnish with parsley, and serve immediately.

Notes

  • For extra spice, add cayenne pepper to taste.
  • Can substitute shrimp for chicken or sausage.
