Creamy Tuscan Salmon and Pasta

This creamy Tuscan salmon pasta is a delightful way to elevate your weeknight dinners.

  • 8 ounces fettuccine pasta
  • 1 pound salmon fillets
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach
  • 1/2 teaspoon red pepper flakes
  • Salt to taste
  • Black pepper to taste
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Cook the fettuccine pasta according to package instructions; drain and set aside.
  2. In a large pan, heat the olive oil over medium heat and add the salmon fillets, cooking for about 4-5 minutes on each side until flaky. Remove from the pan and set aside.
  3. Add the garlic to the same pan and sauté for about 30 seconds until fragrant.
  4. Pour in the heavy cream, and add the cherry tomatoes, spinach, and red pepper flakes. Stir and let simmer for 2-3 minutes.
  5. Flake the cooked salmon and return it to the pan, then add the cooked pasta. Toss everything together to combine.
  6. Season with salt, black pepper, and sprinkle with Parmesan cheese before serving.

Notes

  • For added flavor, consider marinating the salmon in lemon juice.
  • Substitute the cream with a lighter option if preferred.
