  • 3 pounds beef chuck roast
  • 2 cups beef broth
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 2 medium tomatoes, diced
  • 3 dried guajillo chiles, seeds removed
  • 2 dried ancho chiles, seeds removed
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 12 corn tortillas
  • 1 cup chopped fresh cilantro
  • 1 lime, cut into wedges

Instructions

  1. In a blender, combine the guajillo chiles, ancho chiles, onion, garlic, tomatoes, cumin, oregano, salt, and pepper.
  2. Blend until smooth, then pour over the beef in the crock pot.
  3. Add the beef broth and stir to combine.
  4. Cook on low for 8 hours or until the beef is tender and easily shreds.
  5. Remove the beef, shred it with two forks, and return to the crock pot to soak in the juices.
  6. Heat the corn tortillas on a skillet and fill them with the beef mixture.
  7. Top with cilantro and serve with lime wedges.

Notes

  • For extra flavor, sear the beef roast before adding it to the crock pot.
