Delicata Squash Salad with Apple Cider Vinaigrette

A warm and inviting delicata squash salad tossed in a tangy apple cider vinaigrette.

  • 1 delicata squash
  • 2 cups baby spinach
  • 1 apple, diced
  • 1/4 cup walnuts, chopped
  • 1/4 cup feta cheese, crumbled
  • 3 tablespoons olive oil
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon honey
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Slice the delicata squash in half lengthwise and scoop out the seeds.
  3. Place the squash halves on a baking sheet, cut side up, and brush with olive oil. Season with salt and pepper.
  4. Roast in the oven for 25-30 minutes or until tender.
  5. While the squash is roasting, prepare the vinaigrette by whisking together olive oil, apple cider vinegar, honey, salt, and pepper in a small bowl.
  6. Once the squash is done, let it cool slightly, then slice into half-moons.
  7. In a large bowl, combine the roasted squash, baby spinach, diced apple, walnuts, and feta cheese.
  8. Drizzle with the vinaigrette and toss gently to combine.
  9. Serve immediately, or chill and serve later.

Notes

  • For added flavor, consider adding dried cranberries.
  • This salad can be served warm or cold.
