Easy Cheesy Eggplant Gratin

  • 2 medium eggplants
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 large tomatoes, sliced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 cup fresh basil, chopped

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice the eggplants and sprinkle with salt. Let them sit for 30 minutes to draw out moisture.
  3. Rinse and pat dry the eggplants.
  4. In a pan, heat olive oil, add garlic, and sauté for 1 minute.
  5. Layer half of the eggplant slices at the bottom of a baking dish.
  6. Spread half of the ricotta cheese and sprinkle half of the oregano, salt, and pepper.
  7. Add a layer of sliced tomatoes.
  8. Repeat the layers with the remaining eggplant, ricotta, and seasoning.
  9. Top with mozzarella and Parmesan cheese.
  10. Bake for 35-40 minutes until golden and bubbly.

Notes

  • For a spicier dish, consider adding red pepper flakes to the layers.
  • Let the dish sit for 10 minutes after baking for easier slicing.
