  • 1 lemon, juiced and zested

  • 2 tablespoons fresh parsley, chopped

Instructions

  1. In a medium saucepan, heat olive oil over medium heat.
  2. Add the minced garlic and sauté for 1 minute until fragrant.
  3. Stir in the rice and cook for 2-3 minutes, until lightly toasted.
  4. Pour in the chicken broth, lemon juice, lemon zest, salt, and pepper.
