Mediterranean Quinoa Salad

A vibrant and nutritious Mediterranean Quinoa Salad that’s easy to make and perfect for healthy eating.

Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, finely chopped
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa under cold water.
  2. In a pot, bring water to a boil, add quinoa, and simmer for 15 minutes.
  3. Fluff the quinoa with a fork and let it cool.
  4. In a large bowl, combine cherry tomatoes, cucumber, red onion, olives, and feta cheese.
  5. Add the cooled quinoa to the vegetable mixture.
  6. In a small bowl, whisk together olive oil, lemon juice, oregano, salt, and pepper.
  7. Pour the dressing over the salad and toss to combine.
  8. Serve chilled or at room temperature.

Notes

  • This salad can be made a day in advance for better flavor.
  • Feel free to add other vegetables such as bell peppers or carrots.
